- Add a dollop of ketchup to the center of each pastry circle and spread it lightly.
- Place a slice of mozzarella on top of the ketchup, followed by a sausage circle.
- Top with an olive slice for an added burst of flavor.
- Wrap the puff pastry around the filling, pinching the edges lightly to secure.

- Preheat your oven to 180°C (350°F).
- Arrange the assembled sausage bites on a baking tray lined with parchment paper.
- Brush each pastry bite with beaten egg to give it a golden, shiny finish.
- Sprinkle lightly with salt and freshly cracked black pepper.
