In a mixer, put 1 egg white, 1 whole egg and the sugar.
Beat until you obtain a foamy, white cream, like egg whites.
Add the sifted wheat flour and mix gently using a spatula.
Using a tablespoon, place a little of this foamy mixture on the flans in the glasses.
Assembly and finishing:
Place the glasses in a mold and add boiling water to halfway up for cooking in a bain-marie.
Bake in a preheated oven at 160°C for around 30 minutes,
or until golden brown on top. It is important to cook at low temperatures!
