Instructions:
1. Activate the Yeast:
In a small bowl, combine the warm water and a pinch of sugar. Sprinkle the yeast on top and stir gently. Let it sit for 5-10 minutes until it becomes frothy.
2. Mix Wet Ingredients:
In a large bowl, whisk together the milk, eggs, sugar, softened butter, vanilla extract, and lemon zest (if using). Add the frothy yeast mixture into the wet ingredients and stir to combine.
3. Add Dry Ingredients:
Gradually add the flour and salt to the wet ingredients, mixing as you go. Once the dough begins to come together, knead it on a lightly floured surface for about 5-7 minutes, until smooth and elastic. You can also use a stand mixer with a dough hook attachment.
4. Let the Dough Rise:
Place the dough in a lightly greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
5. Shape the Donuts:
Once the dough has risen, punch it down gently to release the air. Divide it into small portions (about 10-12 pieces), then roll each piece into a ball. To form the donut shape, roll the dough into a log and join the ends together to form a ring, pinching the edges to seal.
6. Fry the Donuts:
In a large, deep skillet or pot, heat vegetable oil over medium heat to about 350°F (175°C). Carefully drop the donuts into the hot oil, a few at a time, and fry until golden brown on both sides, about 2-3 minutes per side. Make sure to monitor the oil temperature to avoid burning the donuts.
