4 large yellow onions (peeled and thinly sliced)
4 tablespoons unsalted butter
1 tablespoon olive oil
2 cloves garlic (minced)
1 teaspoon sugar (to help caramelize the onions)
1/2 cup dry white wine (optional, but recommended)
6 cups beef broth (preferably homemade or low-sodium)
1-2 sprigs fresh thyme
2 bay leaves
Salt and freshly ground black pepper (to taste)
1 tablespoon all-purpose flour (optional, for thickening)
8 slices French baguette (or other crusty bread)
2 cups Gruyère cheese (shredded)
1/2 cup Parmesan cheese (shredded)
