Instructions:
Preheat Oven: Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
Make Crust: In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture evenly into the bottom of the prepared pan.
Melt Butterscotch Chips: Melt the butterscotch chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
Make Cheesecake Filling: In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs, vanilla extract, and heavy cream, and mix until well combined. Fold in the melted butterscotch chips.
Bake: Pour the cheesecake filling over the crust and spread evenly. Bake for 30-35 minutes, or until the center is set.
