🌿 Ingredients for a Traditional Chicken & Vegetable Tagine
Protein
1 whole chicken, cut into pieces (or fish fillets for a coastal twist)
2 tablespoons olive oil
Vegetables
2 ripe tomatoes, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, thinly sliced
2 carrots, peeled and halved
1 zucchini, sliced
A handful of green olives (pitted or whole)
1 preserved lemon, quartered (optional but traditional)
Spices & Aromatics
1 teaspoon ground ginger
1 teaspoon turmeric
1 teaspoon sweet paprika
½ teaspoon ground cinnamon
1 teaspoon cumin
Salt and pepper to taste
2 cloves garlic, minced
A small bunch of fresh cilantro and parsley, chopped
Liquid & Base
½ cup water or chicken broth
Optional: saffron threads soaked in warm water for added depth
To Serve
Warm khobz (Moroccan bread) or couscous
